Ingredients

2 cup maida/plain flour

2 tbsp cornflour

½ tsp salt

2 ½ cup water

For Stuffing

2 tbsp oil

3 clove garlic

2 finely chopped chili

2 tbsp finely chopped spring onion

½ sliced onion

1 carrot

2 cup cabbage

5 chopped beans

½ chopped capsicum

2 tbsp vinegar

2 tbsp soy sauce

2 tsp chili sauce

¼ tsp pepper powder

½ tsp salt

½ cup maida paste for sealing

Oil for frying

Instructions

  • In a bowl take, 2 cups maida, 2 tbsp cornflour & ½ tsp salt & add 2 ½ cups water & mix it well.    the best restaurant in Ahmedabad
  • Stir it well until all the lumps disappear and also add more water if required.
  • Now grease the pan and turn it on. Once it gets hot, put some amount of batter on it and spread it in a round shape.
  • Cook for one minute until the sheet is cooked. Make sure that it has not burned.
  • Once this side is cooked, flip it over and continue to cook the other side as well.

  • Firstly in a large wok, heat 2 tbsp of oil and then let it become hot. Once it’s heated, sauté 3 garlic cloves, 2 chili & 2 tbsp spring onion.
  • Add ½ chopped onions and stir fry on high flame.
  • Thereafter, mix 1 carrot, 2 cups cabbage, 5 beans, ½ capsicum.
  • Stir fry it but also make sure that the vegetables remain crunchy as well.
  • Once they are cooled a bit, add 2 tbsp vinegar, 2 tbsp soy sauce, 2 tsp chili sauce, ¼ tsp pepper powder, and ½ tsp salt.
  • Mix well and the stuffing is ready.
How to fold and fry spring oil
  • Take the wrapper prepared in the first phase and add 1 tbsp of stuffing into it.
  • Now roll the wrapper and seal it tight by applying the maida paste on the edges.
  • Deep fry in hot oil at low flame.
  • Fry until the roll turns golden brown and crisp. Remove the excessive oil by placing them on a napkin.
  • Take them out and serve them hot.
