Sweet Potato Black Bean Chilli
INSTRUCTIONS
  • 1-2 tablespoons olive oil
  • 1 medium onion, diced small
  • 2 garlic cloves
  • 1 large sweet potato, peeled and diced
  • 2 tablespoons mild chili powder
  • 2 teaspoons cumin
  • 1 teaspoon salt
  • diced tomatoes
  • black beans
  • 2 cups water

OPTIONAL TOPPINGS

  • 1-2 Chopped Avocados
  • Chopped Cilantro
  • Chopped Green Onions
DIRECTIONS

Step –1: Put a pot at medium heat add olive oil or any other edible oil which you are using sauté the diced onion for 3-4 minutes until they are translucent, then add in the garlic & sweet potato and cook about 2 more minutes

Step –2: Next add the chili powder, cumin & salt. Stir into the vegetable mixture.

Step –3: Pour in the diced tomatoes along with their juices, black beans, and the 2 cups of water, stir to combine, stir the mixture, uncovered, for 20-25 minutes.

Step –4: Use the back of a spoon to mash some of the sweet potatoes for a thicker texture, if desired.

For a few minutes until it cooked through, and then serve with optional topping on top.
