Ingredients

For the cake

200g Golden Caster Sugar

200g Unsalted Butter, (softened, and some extra for greasing the tin)

4 Large Eggs, fresh (very important)

200g Self-Raising Flour (all-purpose flour should be available as such variant)

2 Tbsp Cocoa Powder

1 tsp Baking Powder

½ tsp Vanilla Extract

2 Tbsp Milk

For the buttercream

100g Milk Chocolate, chopped

200g Butter, (softened)

400g Icing Sugar

5 Tbsp Cocoa Powder

2 tbsp Milk

For the chocolate shards (optional)

50g Dark Chocolate

25g Milk Chocolate

25g White Chocolate

Instructions

1] Let’s begin with, Heating your Oven to 190C 170C or fan/gas 5 levels. Using a silicone brush, apply the softened Butter to the base and sides of the Two, 20cm round sandwich tins, and grease the bases with baking parchment paper.

2] Pour in a large bowl the 200g golden caster sugar, 200g softened unsalted butter, 4 large eggs, 200g self-raising flour, 2 tbsp cocoa powder, 1 tsp baking powder, ½ tsp vanilla extract, 2 tbsp milk, and a pinch of salt until pale. Beat until you see a uniform batter that is soft, fluffy, even & without any clumps of anything. Yes, no clumps at all!

3] Split the prepared mixture between the greased & ready tins.

4] Pop in the tins in the preheated Oven, and Bake for 20 minutes.

[Tip: Alternatively, if you wish to have personal control over the cake texture or have experience in personally checking the bread results, you can insert a skewer or thin knife into the center of the cake, and check if it comes out clean, without any batter or crumbs sticking to it.]

5] after you have taken out the tins from the Oven, allow them to cool off in ambient room temperatures gradually for 10 minutes. After which, you can turn them over & pop them out onto a wire rack, allowing the insides of the cake to cool completely.

Now to go for preparing the buttercream

6] Plop the 100g chopped milk chocolate into a heatproof bowl, for melting in the microwave. After heating up in the microwave, take it out and keep stirring every 30 seconds. Leave the melted chocolate to cool for 5 minutes.

7] Mash the 200g Softened Butter, along with 400g Icing Sugar using a fork, after which, use a wooden spoon or electric beaters for a finer consistency and an even smoothened texture!

8] Gradually, sift in 5 tbsp Cocoa Powder, adding a pinch of salt along with, and pour into the melted chocolate with 2 tbsp of milk. Keep mixing in, until even & smooth!

9] Finally, as this mixture is still semi-warm, and settling in, pour it over the two halves of cake bread we just baked & left to cool off! Set aside until cools, and the upper layer thickens.

TIP: you can sprinkle Chocolate Shards on the top layer or around the Cake after pouring in the buttercream, by grating or shredding or making tiny shards of the small pieces of Dark Chocolate, Milk Chocolate, White Chocolate, which we had kept separately in the beginning!
