- Chicken
- 1 tsp ginger-garlic paste
- Finely chopped green chili
- Water
- Finely chopped spring onion, red capsicum, cabbage
- Boiled and mashed potato
- 1 tsp chili sauce
- Black pepper powder
- Salt to taste
- ½ cup maida or all-purpose flour
- 2 tsp corn flour
- Sevai
- Oil

- Take a pan and add chicken to it. Thereafter, add ginger garlic paste, green chilli and mix it well.
- Add some water, cover it and cook for 10 minutes.
- For an alternative option, you can also cook the chicken in a pressure cooker until 1 whistle on medium flame.
- Allow the chicken to cool down once it boils properly. After it cools down, shred it with a fork and separate it as much as possible.
- Add spring onion, cabbage, rec capsicum, potato, chilli sauce, and black pepper powder, salt and mix everything together.
- Also, you can add more vegetables of your choice.
- In another bowl, take maida and add some salt and mix it well.
- Add a little water every time and convert the flour into a batter.
- The consistency of batter should be medium, neither be too thick or thin.
- Take the mixture prepared earlier and form medium sized cutlets out of them. Dip the cutlets in the maida batter and then place them into the bowl of sevai.
- Coat them with sevai by rolling them and pressing properly.
- Again transfer the cutlets back into maida batter and coat it in a way that the sevai properly sticks to it.
- For the second time, again transfer the cutlet to sevai and recoat it. This method is known as double coating. This will make the cutlets crispy and crunchy.
- Now, heat up the oil pan and when the oil is heated, drop the cutlets in them.
- Fry the cutlets from one side for 3-4 minutes and repeat the same with the other side.
- Once you fry them, place it on a paper napkin so that extra oil can be soaked in.
- Your chicken cutlets are ready to be served and they perfectly go with chilli sauce, raita, chutney or anything else you like.
