  • 1 cup whole milk
  • 1 cup heavy cream
  • ½ vanilla bean, split lengthwise and seeds scraped out and reserved
  • 4 large egg yolks
  • ½ cup sugar
  • 3 tablespoons cornstarch
  • ½ teaspoon fine sea salt or table salt 
Directions –
  • Heat milk and cream in a medium saucepan over medium-low heat until it begins to simmer. Add vanilla bean pod and seeds; let sit off the heat, covered, 30 minutes.
  • Rewarm milk mixture over medium-high heat until almost simmering. Meanwhile, mix yolks and sugar in a medium bowl. Blend in cornstarch and salt. Slowly whisk hot milk mixture into yolk mixture, 1/2 cup at a time. 
  • Pour mixture back into pan and cook, whisking constantly, until as thick as pudding, about 4 minutes. Pour custard through a strainer into a clean bowl.
  • Lay plastic wrap against the surface of the custard to keep the skin from forming. Chill at least 3 hours and up to 4 days.

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 3 very ripe bananas, mashed
  • ¾ cup packed brown sugar
  • 1 large egg
  • 3 tablespoons vegetable oil
  • 1 tablespoon grated orange zest
  • 1 cup chopped walnuts
  • ¾ cup semisweet chocolate chips
  • ½ cup rolled oats

Directions – 

  • Preheat the oven to 350°F. Grease and flour a 9-by-5-inch loaf pan. Whisk flour, baking soda, baking powder, and salt in a medium bowl.
  • In a large bowl, using an electric mixer on medium speed, beat together bananas, sugar, egg, oil, orange zest, and 1/2 cup water until thoroughly combined, about 3 minutes. Reduce mixer speed to low and add flour mixture in 2 batches, beating after each addition until just combined. Scrape down the sides of the bowl.
  • Stir in walnuts, chocolate chips, and oats. Pour batter into a loaf pan and bake until bread is golden brown and a skewer inserted into the center comes out clean, about 1 hour.
